Radicchio

Radicchio is a red salad green, fairly firm and due to this we often use it as a shell/wrapper for tacos.

  1. We went the wrapper route as noted in the original post. Last night we did ground beef with some grilled onions and garlic seasoned with chili powder, cumin, and fresh oregano, rosemary and cilantro from our garden and some of the summer savory that was in this week's CSA. They naturally look like little bowls, fill them up, fold down the softened then pull the two sides across and begin eating from the whiter, crisper end.

    This morning I put a beef arm roast in our crock pot with the same jerk recipe and seasonings I did on the pork chop Sunday night with 3 tablespoons of both rum and lime juices. We'll then shred it tonight and use the wrappers again.
